The “trippa” (tripe) is cut in thin lines and placed in hot water for few hours. Afterwards, it is cooked with tomato sauce, leeks, pepper, cheese, potatoes and bay tree leaves. The dish must be served hot.
This is the traditional recipe of the village of Strudà, in the municipality of Vernole. This dish along with “pezzetti te cavallu”, horsemeat cooked in tomato sauce, are the protagonist of this festival organised by the association Nuovi Orizzonti.
From the morning, all the women of the villages are busy cooking these tasty dishes that will be than sold at the gastronomic stalls, during the celebration. The food is accompanied from the traditional music of “pizzica”, which takes the visitors into a fascinating dance until late night.
Il succulento appuntamento gastronomico è accompagnato dalla musica folcloristica che trascina nelle danze fino a tarda sera.
