A soft heart red and white hidden in a puff pastry makes rustico a tasty street food of the tradition of Salento. Rustico is always a part of the offer of cafes and fry shops. It is perfect to enjoy aperitivo or to enrich the buffet for special occasions.
The delicious rustico is made with two rounded layers of puffy pastry, with a diameter of about 10 centimetres. In the middle is placed a filling of mozzarella, white sauce and tomatoes, sprinkled with pepper. It is better to taste it warm during a walk or for an aperitivo drinking a cold beer or a juice.
Alcuni cuochi preparano i rustici sperimentando farciture a base di salumi, funghi e altri ingredienti, ma la ricetta più diffusa resta comunque quella originaria. Il rustico fa parte dell’elenco dei prodotti agroalimentari stilato dal Ministero delle Politiche agricole alimentari e forestali.
