The main ingredient of this dish, “la marangianata” is the eggplant (in dialect merangiana). It is similar to “parmigiana di melanzane” but much richer.
This dish was typical of the Saint Oronzo celebration in the end of August but today is included in the traditional cuisine of the area. The preparation is not difficult but it required high quality ingredients to obtain a tasty result.
