Una delle ricette tradizionali di Villa Convento è “lu taraddhu cu lu pipe”, il tarallo con il pepe. Si tratta di un prodotto da forno a base di '''farina''' semplice e molto saporito, legato alla '''civiltà contadina''' della piccola frazione di Novoli a pochi chilometri da Lecce. &lt;br /&gt;

“Lu taraddhu cu lu pipe” è un '''tarallo''' dalle dimensioni piuttosto grandi che una volta si realizzava mettendo insieme i resti della lavorazione del pane e insaporendoli con il '''pepe nero'''. Il prezioso impasto poi si lavorava con il mattarello ricavando lunghe strisce con cui formare dei cerchi da cuocere in forno.&lt;br /&gt;
