Simili nella forma agli strufoli o i salentini “purceddhuzzi”, le “'''Lacrime di Sant’Anna'''” hanno però una forma più allungata e sono composti da mandorle tritate e zucchero in egual misura cotti in una casseruola rimestando continuamente con un cucchiaio di legno.&lt;br /&gt;
&lt;br /&gt;
Una volta freddo, dall’impasto si ricavano delle '''palline allungate a forma di goccia''' poi ripassate nella glassa di zucchero fondente, disposte a montagnola su un vassoietto e decorate a piacimento con confettini colorati o mandorle tritate grossolanamente.&lt;br /&gt;
